My relationship with food and nutrition began in my youth as my health problems began to accumulate. I had a lot of mystery symptoms that no provider knew what to do with, but it seemed clear enough to everyone that my symptoms were somehow food related. I lived in the dark for a long time, trying to understand which foods were “trigger foods” that would set off a cascade of symptoms leaving me sick for days at a time. Finally in 2018 I was given a diagnosis of Celiac’s disease, a life long autoimmune disease caused by a severe allergy to the gluten protein.
Like many diagnoses, it was both a blessing and a curse. I was empowered with the knowledge about what had been plaguing me my whole life, but at the same time I was faced with years and years of irreversible damage to both my digestive track and my nervous system. To add insult to injury, the internal damage from a life of undiagnosed Celiac’s disease has left me with multiple other food allergies which all together have made the most basic human function of eating feel like navigating a minefield everyday.
Throughout this personal experience, I have learned a lot about eating well to control chronic symptoms and keep illness at bay. The food we eat (or don’t eat) is essential not only to our physical health, but to our mental and emotional health (did you know there are more Serotonin nerve endings in the small intestine than in the actual brain?) The food we eat literally becomes us, it informs our muscles and bones on how to grow, and our brain on how to perceive the world around us.
